This project is the work of good mates Craig Stansborough and Mark Slade. Stylistically pinot gris/grigio in Australia can come in many different shapes and sizes. This example is streamlined and fresh but has some fleshiness and roundness taking it nicely into the pinot gris sphere. Delicate florals of lemon pith and chamomile take the lead and then on the palate the refreshing natural acidity shines bright and balances out the layered primary fruit notes of nectarine and ripe pear. A smashable summer drop – drink with grilled scallops, ginger and shallots or with your favourite yum cha dumplings.
