Coonawarra Savvy might not be an obvious thought but as one of our cooler regions, there is no reason why it can’t succeed. After all, its distant sibling, Cabernet Sauvignon does okay. This effort comes from a single vineyard on terra rossa soil. Harvesting time, which takes place in the cool of the early morning, is based on monitoring the ‘flavour, acid and sugar’ in the grapes. Five hours skin contact before a gentle pressing, cold settling for two days. Three batches each received different yeast treatment to increase complexity. A cool fermentation in stainless steel for 18 days. 

Pale lemon in colour, the nose is ripe and full of appealing tropical notes. Full-flavoured with mango and guava, backed by touches of citrus and some nettles. An attractive style. Good acidity here, with some weight and a mid-length finish. Fans of the variety will love this, though a touch more length would elevate it even further.
