Harvested by hand and basket pressed to a portion of French barriques and stainless-steel tanks. White nectarine, lemon balm and orchard apples. Sandstone, crushed chalk and pea tendril. Bursting with energetic acidity and ocean spray. There is a cinch of skin texture and the dryness of lilly pillies on the finish. The wine screams freshness and beach culture ease. It’s drinking beautifully and will age glacially for up to 15 years. Chenin Blanc lives a good life on the West coast of Australia. Serve with scallop on the half shell with browned miso butter.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
