There’s an attractive mix of intensity and finesse to this charming sparkling sourced from high up – 450 metres, to be precise – in the Adelaide Hills. Looking fresh and composed in aromas of white flowers, grilled grapefruit, lemon, red apple, honeydew melon with a touch of nuttiness. Flavours are generous thanks to time in seasoned and new oak, aided by some complexing yeast autolysis. The result blends middle palate creaminess and character with the liveliness of a persistent airy bubble and mousse, and typically brisk Adelaide Hills acidity. Honeyed spiced pear, peach and citrus, grilled nuts and more are to be enjoyed in this smart, dry sparkling.
