From vines that are now over 25 years old this is super fragrant with salty plum, black olive, thyme and sage jumping out of the glass. The palate is elegant and refined with the tannins very fine and powdery against the refreshing acidity. The balance and tension between flavour the structure are seamless. The fruit has a purity and intensity that draws you back in to take another sip. The length keeps going and fans across the tongue like a peacock’s tail with bright flavours of cassis, mulberry, cedar, tomato leaf and a dash of oregano and basil. Sip this with home-made Shepherd’s pie (lamb mince, a rich gravy and buttery mashed potato).

He has created and managed wine lists for over 30 venues including ARIA Sydney, Opera Bar and Chiswick. In 2011 Matt won the Sydney Morning Herald’s 2011 ‘Good Food Guide Louis Roederer Sommelier of the Year’ and his team won the 2015 Wine List of the Year in the Good Food Guide for ARIA Sydney plus he was a Len Evans Scholar.
