Wills Domain Eightfold Shiraz 2019

Picked from a combination of vineyards in the early morning to keep the grapes cool, the juice saw a gentle destemming before a three-day cold soak. Cultured yeasts used, twice daily pumping over. The wine was then left on skins for five days before pressing and racking to barrels. The colour here is a bright cherry/magenta. Exuberant aromas weaving throughout a mix of red and darker berries, chocolate, warm earth, aniseed, coffee grains and animal hide notes. A soft and supple palate through to gravelly tannins on a very long finish. Bright, youthful, fresh and full of flavour the palate exhibits more red berry characters. A wine with a future.
