Lime blossom, honeysuckle and jasmine are met with Calippo sorbet like aromas. Fresh fennel bulb, lemongrass and a distinct white pepper powder as well. The acidity is held in restraint without the hardened edge. Chalk and blue stone are followed by a savoury cucumber, radish and lemon thyme note. There is a real story over the palate here. Its array of fruit, florals and herbs make for complex drinking. A lovely pairing would be with smashed cucumber, wakame seaweed and black sesame or equally a salad of garden peas and herbs. Get green.
