67% Chardonnay and 33% Pinot Noir for the 2019 traditional method sparkling wine. Fruit is sourced from the Yarra Valley and Pyrenees. On lees for 4 years. Golden apples skin, logans and citron zest. Lemon yoghurt and apple blossom. Toasted almond and shortcrust pastry. Lingering yeasty notes creep in on the edges of vibrant orchard fruit and wafts of white florals. This is drinking well now but also has some serious cellar time with those hazelnut shells and baked good elements to unfold. Tank ferment allows fruit quality to shine. Another reliable vintage from this excellent Australian sparkling. Drink with cheese gougeres, that’s cheese puffs for the humble dinner parties.
