96% Cabernet Sauvignon and 4% Merlot. Open fermenter for 12 days followed by 15 months in French barriques new and old. Red tulip, rosella and mulberry. Lingonberry, black cherries and blood orange bitters. Oak shows in cedar and roast cumin spice. The wine is well integrated and a silky drink with very fine grained tannins. A touch of carob and chocolate powder on the finish. It’s in its peak drinking now and would sit well beside spiced lamb mince on flatbreads.
