53% Chardonnay and 47% Pinot Noir with 9% reserve wines and 2.5 years in barrel. The wine has a dosage of 4g/l. An elegant peach skin blush in the glass. The wine is highly perfumed with pink lady apple, rhubarb and strawberry shortcake. Baked tart tatin and quince jelly, the oak ageing of the wine takes this to a new level of edible delights found in a good french patisserie. Chardonnay carries the line of acidity and stretches out the pistachio and nut brittle flavours. Bottle age has only benefited this wine and it’s drinking beautifully. A sparkling wine for the Rosé aficionados and would look sublime served alongside a terrine of game meats.
