A blend of five mysterious varieties grown in the Hilltops region. Natural carbonic maceration achieved here in this crunchy style wine. Satsuma plum meets lingonberries, redcurrant and dried vine leaf. The sweet, salty and sour Li Hing Mui Hawaiian powder comes to mind. There is caper leaf, lavender and dried thyme. Morello cherries and pomegranate juice. Acidity is elevated and tannins are fine, silty and elegant. A slight chill suits the wine but don’t go too far and miss the nuances of which there are plenty. Dried strawberry and apricot with a touch of cumin. A wine that would suit many occasions, drink now with a plate of olives, marinated vegetables and cured meats.
