Technical stuff, first. It’s been hand harvested on a biodynamic flower day and placed as whole bunches into amphorae, then pressed two days later into a new puncheon where it fermented and remained for a further 8 months before being bottled without fining or filtration. Where do you start with this thoroughly beautiful chardonnay? Let’s start with the bright luminous colour tinged with a green vibrant hue. Then the aromas of lemongrass and lime with a trace of vanilla pod. And finally the palate which delivers with extraordinary power and rich intensity.
