While the Adelaide Hills was for many years considered the home of Australia’s greatest sparkling wines, recent years have seen other regions challenging for the crown. But wines like this remind us just how well suited the hills are to the highest quality sparkling, the best of which are full of finesse and detail.

This wine, the third releases of DAOSA Natural Rèserve, is mainly from the 2018 vintage with 23% older reserve wines to add layers of complexity. The DAOSA style champions pinot noir yet it is still delicate and light on its feet – the pinot noir showcased mainly by generous palate weight. It is aromatically subtle with French pastry and citrus elements which then evolve into more nougat and praline on the palate. There is also a chalkiness to the acidity and brightness of fruit before a long and silky finish. It’s young and taut suggesting this wine will have plenty more to give over the next five years.
