This wine is restrained and savoury, made in an Old-World style. There is a subtle cut grass note combined with dried Mediterranean herbs and garrigue. Preserved lemon and earthy forest flavours put this wine firmly in the savoury spectrum again. There is a supple, rounded texture reigned in with chalky phenolics and lemon acid drive that adds structure to support the deft winemaking. This is a grown-up Sauvignon Blanc with wild yeast, lees stirring and quality barrel work attest to.
