‘Peritia Tempore’ is a Latin term essentially meaning ‘knowledge with time’, or even ‘wisdom through experience’, which is how Genista owners Lloyd and Sarah described their first ten years in the wine industry. They marked the occasion with the bottling of their Peritia Tempore Shiraz, which is a lovely drop. It opens with beautiful aromas of blackberry, mulberry, cinnamon, pepper and dried red and black fruits and shows a deep purple colour. The palate is rich and enticing, and while the wine is nice by itself, it enhances and is enhanced by food. With a bit more time in bottle, it should get even better.
