Indomitus – Latin for ‘untamed,’ ‘unrestrained’ – indeed! Prepare yourself for a dark, savoury, textural walk to the other side of Rosé where a wild Hilltops Sangiovese dwells. Aromas draw you in dark cherry, wild strawberry, dried flowers, hints of herbs and earth offset by the lightest confection note. First and foremost, this is a textural wine. It spent 12 hours on skins before fermentation in oak with wild yeast and was matured on lees for six months. It runs long and smooth and less obviously fruity than regular Rosé drinkers might expect, but rather is more in tune with an earthiness, roasted almond and hints of dried fig amid the red berries, plum and soft spiciness. It’s one serious Rosé and should be a good ager, too. Oh, and it’s a natural with a wide range of foods.
