The fruit is Tumbarumba from the Herald Revee vineyard, the oldest in the region. A citrus dominant wine with lovely curls of sliced mango and white nectarines that adorn the pomelo and grapefruit. White stone and chalkboard dust with some cedar and almond oil. It’s electric in its energy, like a lemon tree being shaken at harvest time. Some white pepper and creme fraiche creaminess adds layers to the long flavour palate. A very pure wine with a long life ahead. Drink now or in 5-8 years with further careful cellaring. A night partnership might be a salmon fillet on baked fennel.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career.
