A pithy and bright aromatic opening, especially when compared to that of the Muntà l’è Ruma. This is more reticent and begging for air. Lemon juice and lemon pith make way for deeper set notes of preserved kumquat and pecorino cheese. The minerality is more quartz-like here, melding with the classic saline aromas to make for a complex and beguiling aromatic profile when given time to unfurl. The palate, on the other hand, bursts with ripe lemon, white peach, cinnamon spice, and a preserved lemon bite. As with the Muntà l’è Ruma, the minerality cuts through it all keeping focus and verve. Waves of clean acidity then sweep through to wash it all down, carrying the preserved lemon bitterness long through the palate. Another brilliant release, especially with some aeration to let it shine.
