Pineapple core, winter melon and white nectarine meets chalkboard duster, loofah and pumice stone. There is candied lemon, grated nutmeg and cinnamon powder. A lemon citron tart with greek yoghurt acidity, this walks the line of that fine boned zesty style but with elements of voluptuousness. Oak is present of which 30% is new and adds a warm spice note to the crunchy citrus and tree fruits. It’s a contrasting drink that feels both moreish and smashable. Drink with a nippy sauce like Beurre Blanc spooned over a wild salmon fillet.
