Strikingly brilliant and delicate in appearance. In the glass it is elegant, displaying plum, black cherry, black tea, and cocoa powder characteristics. It has an aromatic personality which tells the story of pristine fruit used in the making. Once it is fully open, it releases black pepper and graphite notes, further elevating the sensorial experience. Luckily for me, a Tasmanian cape grim scotch fillet to match, took the wine to another dimension. The structured drive and core of high acidity of the wine ensure a generous encounter, superbly combining with the food. On the side, the butcher’s special jalapeño sausage, plus celery and avocado salad with pebre, playfully adding freshness and spicy uplift. The premium oak regime provided to this Shiraz gives it a silky tannin of great symmetry, displaying chocolate milk flavours and a long drive. The persistency as it finishes sits nicely on the back palate. It is a wine of elaborated composition, an attractive style with delicious drinkability.
