What BYO Thai dreams are made of. Light energised and smart sugar work. Both varieties were co-fermented in a mix of stainless steel and old oak. Aromatically it leans Gewürztraminer: pressed rose petals, fruit tingles, lychee martini, rosewater, musk, lime zest and a touch of oily generosity. Riesling’s more noticeable by the linear acid and structural finesse. In the mouth, it presents as ‘just’ off-dry. The 8.5g of sugar, cleverly hidden — adding texture and quiet weight rather than overt sweetness. Smart winemaking, smart wine. Good finish.
