This is all Margaret River Chardonnay made in a very natural way. The whole bunches were pressed to old French oak puncheons and naturally fermented over several weeks, after which regular lees stirring was used to bring flesh and texture to the wine. It’s a dry, savoury style of Chardonnay with a nutty brioche like character, especially on the nose that is rich and flavoursome with a dry finish.
