Sourced from 100% Vitovska from Carso Triestino, the true voice of the region. The use of Georgian amphora, as Paolo is known for, is used for skin contact for 6 months. Basket pressed into Slavonian Oak 3000L for 24 months. Blood orange rind, chamomile and yellow plum. Blush peach skin, Rainier cherries and rambutans. Cinnamon powder, nutmeg and dried cumin. Warmed butter and lemon zest. Acidity slithers across the palate amplifying the choir of flavours. It’s magnificent in its detail of fruit, flowers and spice. Burdock root, terra cotta and sesame. Candied walnut and almond. The list goes on. This is a wine odyssey in a bottle. A true realisation of an artist. Beautiful. Drink with a lobster linguine with tongues of uni on top and don’t forget to invite me to lunch please.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
