Parson’s Paddock South Australia Cabernet Sauvignon 2021

Cabernet sourced from various South Aussie regions and fermented/matured in a mix of French and American oak. This is from a stellar vintage. The colour here is a bright maroon. The nose is full of chocolate notes, bay leaves, leather, licorice, mushrooms and black fruits, an appealing array of flavours at this early stage. There is an attractive richness on the palate, which has impressive length and fine, if ever-so-slightly gritty tannins. Enjoy this for the next six to eight years.
