Payne’s Rise Cabernet Sauvignon 2023

14 months of barrel maturation and bottled unfined and unfiltered. A vibrant, nervy, young Cabernet with an intense attack of black fruit and dark chocolate, where blackberry, black currant, and a shade of blue violet notes alternate with sweet and pungent spices and the mildest of the mints. The palate speaks more of that vegetal idiom, with grilled capsicum and spearmint. The nervy presence of the tannins acts as a valuable guide to the considered, fruity length. It will undoubtedly benefit from time in the bottle to integrate the tannins and add extra dimensions to a substantial base.
