As is to be expected, it’s rather tightly coiled upon opening with pointy angles of acidity, nashi pear juice and a little sniff of kerosene. Once it’s settled down though (I gave it an hour), the show really begins. Minerals sparkle all over the roof of the mouth like it was the inside of a geode and the textures soften into quite the graceful and generous wine. You can taste honey melted with butter over white toast on the lips and salty oyster shell on the tip of the tongue. Crunchy lemon and lime boiled lollies stain the mid palate, a lick of crushed almonds and spice on the sides and back and up above, there’s a warming retronasal length – lemon tart just starting to bake.

Morgan Dunn was a Melbourne based sommelier with over 10 years of experience. He was one of our very first Winepilots and wrote a regular wine column for The Australian and contributed to various publications including Noble Rot. In 2017 he was named 'Emerging Wine Writer of the Year' at the Louis Roederer International Wine Writers' Awards as well as receiving the Wine Communicators of Australia award for 'Best Published Feature Article or Wine Column'. He spoke Japanese and was planning to write a book on Tokyo wine bars and wine culture in Japan. In his spare time Morgan played piano, enjoyed snowboarding and went to Escape Rooms with his twin brother. He is deeply missed by many.
