The Merle’s number one rule is: don’t open The Merle too young.
Put The Merle under the bed, at the back of that cabinet in the garage, away from temptation and forget. Three, five, seven years is a fair plan to consider before opening.
This is a wine with time on its hands.
Tight as a drum, coiled, acidity is firm and fruit is still emerging but you can taste the concentration, the wine’s lemon, lime and apple essence.
This is Polish Hill riesling purity and intensity in the glass with signature spice. Love that spice. Almond meal kind of texture is moving everything along nicely, but The Merle is way too early to broach. That can’t be said enough.
This is steely tight. You know what you have to do – wait!
