A higher-end Pinot Grigio offering from a single-vineyard site. ‘Pavona’ is Italian for ‘peacock,’ and the site is named after those that once noisily roamed the area. Lovely florals appear first, with elderflower and pear blossom sitting above nashi pear, poached green apple, green grapes and quince. Some air opens a river stone mineral note, too. There’s good intensity and volume to the palate – nashi pear, green apple, lemon and quince again – along with gentle almond savouriness. Clean texture overall, with good chalky phenolic grip through the finish, adding dimension and shape. Good length, too. A lovely expression.
