A three year old wine under cork and this is looking youthful and expressive. Davidson plum and Acai berries are moving along nicely with the biltong, cumin and cocoa nib spice. There is an iron oar and terra cotta savoury mineral edge with orange bitters and sweet clove spice. This is exactly why you need to be patient and allow your wines time to evolve in the cellar, especially with Pinot Noir, which is hard to do, because it’s so damn drinkable in its youth. Here the shades and shadows add real depth and interest. Some bloody meat and grapefruit rind keep me lifting the glass in anticipation. Tannins creep over time, this still has years left to live. Buy a 6 pack and see it change form, as you will too over the next 6-8 years. Serve alongside beef and black bean sizzling lamb.
