Prosecco’s vigorous and persistent bubbles are always a sign of good things to come. Salatin’s expression is quite stylish with a lifted bouquet combining fruit and floral aromas. The pristine notes of green apple and peach are combined with acacia and jasmine flowers. The crisp palate is pure, smooth and semi-dry with juicy lemony acidity. We enjoyed the wine with canapes and a main over a lazy Sunday dinner. I put special care into sourcing finger foods that mirror the flavours of an Italian Prosecco. The matching of the two is present on the palate like a soft mouthful of pear and almonds. Main course is a savoury ham tomato quiche. The wine now enhances the creaminess, fluffy texture and richness of the dish. The crusty pastry is delightful as it interacts with the creamy froth of the wine. Overall, this is an extremely versatile and enticing Prosecco.
