This wine smells like black forest cake – a really dark one made with bittersweet dark chocolate, late season deep black cherries and spicy vanilla pod. The cocoa powder vibe extends to the palate with fine savoury tannins. The flavours are fresher and tangier here – strawberries and redcurrants with a hint of fresh thyme. It’s juicy and would be delicious slightly chilled. However, it’s winter here in Melbourne so I will be pairing this with a simple roasted vegetable salad; caramelised roasted beetroot and pumpkin atop fresh baby spinach, sprinkled with crumbled chèvre and toasted walnuts.
