Inky and dense with blackberries, cassis, brooding violets and dark, bittersweet flourless chocolate cake. There’s an earthy, slatey minerality. Just a small amount of Viognier (5%) adds the floral spice of a spring vegetable garden as the shoots start to bloom. Flavours of black cherries, fresh peppercorns and the umami of unsweetened carob. The graphite drawing-pencil tannins, and bright early-summer blueberry acidity promises a lot of joy with further cellaring too. Pair with a chargrilled wagyu steak served with fragrant roasted parnips and Jerusalem artichokes.
