A south east facing sandy outcrop, 20% whole bunch. Wild yeast, basket pressed Matured in French and Austrian foudre for 18 months. A spicy and dark fruited wine with glimmers of bright green herbs dotted throughout. A spring of rivermint, plum and cassis. There is a smoke vanilla note adding richness to the perky line of acidity. This is made for drinking more than one glass, so is its approachability and freshness. A masterclass in whole bunch that only adds to the wine personality. Drink with duck or lean game meats. Drink now or cellar for 6-8 years.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
