Rising Bad Earth Pétillant Naturel 2021

A blend of Chardonnay, Semillon, Savagnin, Sauvignon Blanc and Gewürztraminer makes this pale canary yellow hued Pet Nat very interesting. The first impressions are of clean and crisp green apple and their blossoms, lemon zest and talc – it’s clear the Chardonnay fruit is shining through. A savoury water cracker biscuit note is followed by glace pears, roast cashews and creamed corn. This is a serious drink with a warmth rounding out the finish, all the hallmarks for a partnership with shellfish and pools of garlicky butter.
