Drinking a Château Chalon Vin Jaune from 1977 is like being immersed in another realm of taste. This wine is so complex! After 6 years and 3 months in barrel, without being topped up, it loses 38% of its content during this time and the rest of the precious liquid develops this distinctive flavour of saffron, curry leaf, turmeric, roasted hazelnuts, well developed walnut, dried white fruit, preserved lemon, dried figs, wild mushroom and spicy ginger-y poaching concoction. Anyone serious about wine will tell you to have it with aged comté cheese ? as a must try wine + food pairing.
