Now we are getting a serious Sauvignon Blanc here thanks to fermenting and ageing in oak on its yeast lees which has provided a lovely textural feel to the wine. Pale in colour, the aromas are beautifully bright and multilayered – passionfruit, guava, shortbread and nougat with spicy understated oak providing support. The palate is then more reserved and serious thanks to a core of savoury, concentrated fruit with more vanilla bean oak which leads to a long and silky finish. There is density to it but also a lightness and a freshness thanks to juicy acidity. A super food wine for sure.
