From a small estate block in the renowned Willyabrup district of Margaret River, this Shiraz is a willing example of how southern rusticity can also offer a cool-climate style elegance in the variety. It wafts with a demonstrative earthy, minerally, gamey aromatic vibe, plenty of thyme and sage herbal suggestions, white pepper as well, all slipping easily into the palate to join a crimson cherry flavour line, tempered by a subtle, salivating, gastronomic bitterness in the finish. Nasal and palate aromatics rule this tidy expression of Shiraz – it’s a ripping partner with pizza and pasta, and loves a hit of chilli along the way.
