George’s Folly Fleurieu Pie in the Sky Shiraz 2021

This was a great wine to have a bit of patience with, as it developed beautifully over two nights. The nose is dark and rich, throwing off oodles of blackberry, plum, raspberry and mulberry, while oak-derived coconut and earth, game and shoe polish give it some more savoury depth, as it’s not three years old. Despite the darkness, the palate is juicy, with lots of fruit sweetness, all amounting to a very tasty wine. As stated above, having some patience will bring rewards, as the aromas and flavours become richer with some air, so it’s definitely worth saving some wine for a second outing.
