Similar to gazing at the Southern Ocean in winter and feeling an involuntary shiver, smelling this wine makes me salivate. Grapefruit sorbet, preserved lime and musk sticks. It’s fabulously coy and wildly exotic all at once. In the mouth, it’s dry as a bone. Wet steel, river stones and the sensation of getting your tongue stuck to a frozen pole (in a good way) come to mind. The acid is brisk and mouth-watering, carrying the wine through a long, citrus-laced finish. Very reminiscent of its regional style. I’d happily pour this over an oyster and slurp it back while smiling ear to ear.
