How about this for a change, a rosé made to age. Matt Burton makes this rosé from wild fermented Hilltops Nebbiolo fermented on solids in oak without clarification. So it’s about as far from the usual simple, sweet rosé as you are ever going to get. So much so that it is not quite ready to drink.

You’ve really got to dive deep into this wine to see all it has to offer, which is a well of baked raspberry, spice and subtle charcuterie, just out of the fridge. The palate then turns on the power with a fullish body and skinsy grip although the fruit remains somewhat restrained and savoury with pithy flavours and hints of watermelon skin. Crisp Nebbiolo acidity is also on show plus well managed soft tannins to support a long, supple finish. Shy on its own right now but you can be sure it will absolutely come into its own with food.
