Light Pink Lady apple hues in the glass and on the nose. Some baked rhubarb and cantaloupe. Citrus falls in the shape of tangerine, with some lemon drop as well. Underneath that you’ll find some pickled plum, strawberry delicately spiced with ginger. A fine persistent bead with cranberry nougatine and biscotti. I love the way this wine takes you on a thrill ride from tree fruit to foraging berries and onto underground fragrant roots. Its bright acidity lingers, carrying the mid palate spice through to the finish. This is the kind of sparkling wine that carries you right through a meal, shining with appetisers and hitting a crescendo with seared salmon for main, maybe another bottle to share alongside dessert? Drink now or will cellar well for another 3-5 years.
