This sure does pack a punch. Cabernet Sauvignon is hand-picked, dried on racks and then added to freshly picked Cabernet during fermentation. It really amps up the richness and adds layers of earthy, ripe characters you wouldn’t otherwise see in a young wine. There’s dried violets, blackcurrant wine gums, loads of licorice and the umami of salted plum next to fresher fruits of the forest. The tannins are ultra ripe and silky, enhanced by the drying process. It’s a big, warm hug of a wine.
