The name ‘Inigo’ honours the ‘Inigo of Loyola’, a courtier and soldier who gave up that life, became a Jesuit and then a saint. It was his followers who originally built the Sevenhill Cellars. The fruit for this wine came from nine individual blocks on the Sevenhill property, some of which were planted over 100 years ago, while others were planted in the 1970’s. Each block is made discretely, some in old open slate fermenters and others in stainless steel. 15% of the wine sees new French oak hogsheads, while the balance does time in a mix of French and American oak, between one and five years of age. Very dark maroon in colour, the aromas are of rich chocolate, black fruits, dark plums, black olives and leather. It is ripe and dense. This has all the makings of a wine destined for longevity. Seamless, with good length, it maintains intensity throughout. Full flavoured and very attractive to finish.
