Tres Naus Cava Brut Reserva 2017

The attack is rather reserved for a Cava that has spent 48 months on lees. Then, it unfurls notes of freshly baked bread, bread dough, pan brioche, honey toast, lemon curd, crunchy red apples, and honeysuckle. The mousse is quite delicate, but nevertheless, it elevates that fresh lemon zest-like acidity, uncovering a texture like that of a lemon meringue. It does not have an exaggerated length but is a joy to drink.
