The $30 Filius Sauvignon Blanc label gets the same amount of consideration in wine making labour as does the top tier wines. Predominantly direct pressed to stainless and three separate vessels of oak, with a portion remaining on skins in an open fermenter. The wine is matured in stainless steel and those three seasoned vessels of oak. This is melon cut straight from the tree, cantelope, yuzu skin and mango flesh. The tropics are reigned in by some elderflower florals and the palate viscous with sandy texture. This is destined for food, meaty shellfish and prawn bisque, a wine of its own volition. Drink Now.
