There’s loads of interest here, with a metamorphosis from first pour to final sip as the wine relaxes in the glass. It opens in a savoury and alluring mode—honeysuckle, hay, cheesecloth, and hard cheese rind give way to tighter, higher-toned notes of lemon peel, preserved lime, bath salts, and talc, with a glimmer of salted pastry dough beneath. Initially, it leans more to savouriness over fruit, but as it unfurls, the fruit notes integrate beautifully into the profile. The palate is creamy yet precise, cut through with pithy yellow grapefruit, green apple, lemon juice, and dehydrated lime. A tensile coil of limey acidity brings focus, drive, and length. This is well-composed, walking the line between texture and tension with poise, and will no doubt reveal further complexity with age.
