Opens with a twang of salinity that draws you in. Oyster shell and preserved lemon make way for white peach, apricot, almond paste and sourdough as things flesh out, with an underlay of flint weaving through the perfume. The palate is more fulsome and opulent than the nose suggests — white peach, almond cream, apricot, sea spray and fine cedar splay through the mouth hitting every corner, before a corset of fine, chalky phenolics pulls it into linearity. Lovely shots of saline acidity elongate the back palate and freshen things up. There’s richness here, but it is controlled by structure and balance. Leesy and yet packed with fruit power — not for the faint of heart.
