Apple blossom, pastry dough, fresh lemonade, lemon sherbet and subtle macadamia are sliced up by a slatey mineral cut. Very hightoned and pretty with pops of sweetness adding appeal. Air and temperature unlocks bath salts, savoury lemon thyme, and a whisper of mandarin pith. The palate is quite coiled and tensile, with a tight frame of pithy acid and chalky phenolics constricting around lemon juice, lemon pith, slatey minerals again, crushed green apple. If there’s residual sugar here, it’s completely guillotined by the acid which keeps excellent line and freshness through a long finish. Tightly wound, vibrant, bright, structured. Very good. This will do well with five to ten years in cellar.
