Hutton Vale Farm Cabernet Sauvignon 2017

A full-blooded cabernet up front, a little more Barossa than Eden Valley in first impression but look a little closer and signature Eden Valley characters begin to emerge.

The ring of dried herbs and spice – sage, five spice, pepperberry – so Eden Valley. The spread of blueberries that mingle with red and black fruits across the palate – yes, very Eden Valley. They’re joined on the journey by briar, earth, a gamey savouriness and a deep chocolate, woodsy smoke feel of oak.

It’s not the shy and retiring kind of cabernet – it could easily take on prime steak and win – but it does have charm. I put it down to the fine tannins that provide that added lift and brightness as well as structure.
