Cava is a much underappreciated style of sparkler, especially in this country. A blend of Xarel lo, Macabeo and Parellada, this thoroughly enjoyable fizz spends four years on lees and then another couple in the bottle before release. The colour is a gleaming yellow. Well structured, this is quite tight with notes of jasmine, stone fruits, figs, peaches and a real peppermint touch with added hints of tropicals. An attractive style which is clean and refreshing, with bright acidity and showing us medium length. This will please a lot of people over the next three to four years.

But a break fishing on the Great Barrier Reef, and some good wine, started a serious obsession that eventually took over. When not writing, fly-fishing for trout in NZ or bonefish on the flats of Cuba, travelling or smoking cigars, he is no doubt following a variety of sporting teams – the occasionally glorious Queensland Reds rugby, the dysfunctional Washington Redskins, the dodgy Arsenal and especially revels in the world restored to its proper axis with the return of the Ashes to their rightful home.
